Three delicious makeover recipes from leftovers

It is common to cook and have some left- overs, especially with rice, soups, yam and more. Not many people like leftovers and it may sit in the fridge for so long before eventually making its way to the bin.

Not many people like leftovers and it may sit in the fridge for so long before eventually making its way to the bin. If you’re not a great fan of leftovers, perhaps you can learn ways to jazz it up so that it becomes a completely new meal that everyone enjoys and no one would be able to figure out that they’re eating leftovers.
 
Leftover Suya Turns Suya Wrap
This wrap is easy and quick to put together especially when you have most of the ingredients at home. Suya comes with Suya spice and some onions; it makes a great addition to this dish.

INGREDIENTS
2 Sheets of Lettuce
1 Tortilla Wrap
½ Cup Cabbage, Shredded
½ Cup Carrots, Shredded
1 Tablespoon Mayonnaise
½ Teaspoon Ketchup

PREPARATION
First, make the Coleslaw; using a knife or a Mandolin, shred cabbage and grate carrots.
In a bowl, place cabbage, carrots then add Mayonnaise and Ketchup. With a tong, toss the vegetables and set aside. In a pan or microwave, heat up the Suya and set aside

Place Tortilla Wrap on a flat surface. Place some sheets of lettuce the wraps. Scoop a small amount of coleslaw on the wrap. Add some pieces of Suya. Pull the bottom-half of the tortilla to meet the top half. Fold one side in then fold the other side. Once both ends are folded in, roll the tortilla securely into a wrap. Place tortilla on a grill pan (or any pan) on one side for a few seconds, using a spatula to secure it, when it browns a bit, flip to the other side and do the same for a few seconds.

Leftover Potato Turns Frittatta
This dish is perfect with leftover boiled potatoes or yam. It can be cooked on the hob from start to finish, but if you want to intensify the flavours and take it to another level then cook first on the hob and finish it off in the oven.
 
INGREDIENTS
Leftover boiled or fried potatoes (cut into bits or sliced)
5 Eggs
2 Tablespoons Vegetable Oil
1 Cup Smoked Fish, deboned
1 Tablespoon Scent Leaves, chopped
1 Garlic Clove, crushed
2 Tomatoes, sliced
1 Habanero Pepper, chopped
Small Onions, sliced
½ Green Pepper, chopped
1 Teaspoon Ginger, crushed
Salt to taste
Seasoning Cube to taste
1 Teaspoon Curry Powder

PREPARATION
Preheat Oven to 180 degrees Celsius.  Heat vegetable oil in a skillet till it is slightly hot, add onions, ginger, garlic, curry powder and fry until it is softened and just starting to brown.

Add green pepper, tomatoes and Habanero Peppers and fish and fry for 2 minutes.

Add potatoes, season, combine together and cook for 6 minutes.   Crack and whisk together eggs, salt and some seasoning. Pour eggs into the skillet and transfer to the oven for 30 minutes. Garnish with parsley.

Leftover White Rice Turns Egg & Vegetable Fried Rice
Take your white Rice from boring to banging by adding a few vegetables, beef or chicken and some spices. No one would believe this is a leftover makeover!
 
INGREDIENTS
3 Cups Cooked White Rice
2 Eggs
3 Tablespoons Vegetable Oil
½ Teaspoon Ground Red Pepper
Salt To Taste
1 Small Onion, chopped
1 Garlic Clove, Crushed
1 Teaspoon Chopped Fresh root Ginger
2 Spring Onions
1 Teaspoon Curry
1 Tablespoon Soy Sauce
1 Tablespoon Chilli Sauce
½ Red Bell Pepper, Sliced into thin strips
½ Green Bell Pepper, Sliced into thin strips
1 Carrot, Sliced into thin strips
1 Cup Stir fry Beef
 


PREPARATION
Stir-fry beef strips that are easier to cook. Sprinkle Salt and Pepper over beef and allow to sit for 5 minutes.

Heat up non-stick pan, adding a tablespoon of vegetable oil. When the pan is hot, place stir fry beef and stir for 2 minutes till brown. Take it off the pan and allow to rest.

In the same pan, add onions, ginger, garlic, green pepper, red pepper and carrot, stir-fry for a minute then set aside.

In a bowl, add eggs, ground pepper, salt and whisk. Heat up 2 Tablespoons vegetable oil in a pan, preferably a wok, add eggs and allow it set a bit before scrambling lightly. Add rice, stir-fry beef and toss some more so that it is not clumpy, season with soy sauce, add chilli sauce, and the stir-fried Green Pepper, Red Pepper and Carrots.

Once cooked, add spring onions and toss over the heat to mix.
