Nutella Mug Cake
Ingredients:
4 tablespoons self-rising flour
4 tablespoons white granulated sugar
1 egg
3 tablespoons cocoa powder
3 tablespoons Nutella
3 tablespoons milk
3 tablespoons olive or vegetable oil
Makes 1 Serving
Method:
- Combine all ingredients in a large coffee mug. Whisk well with a fork until smooth.
- Microwave on high for 11⁄2 – 3 minutes.
- Top with whipped cream and a little chocolate sauce if desired.
- Top with whipped cream and chocolate syrup. Enjoy!
Strawberries & Cream Mug Cake
Ingredients
1 egg
2 tablespoons strawberry yogurt, well stirred
1 tablespoon vegetable oil
1/8 teaspoon baking powder
1/8 teaspoon vanilla extract
4 tablespoons granulated sugar
5 tablespoons all-purpose flour
1/4 cup fresh sliced strawberries and whipped cream for serving
Makes 2 Servings
Method
- Coat the inside of the mug lightly with cooking spray and set aside.
- Mix the egg, yogurt, vegetable oil, baking powder, extract, sugar and flour in a small bowl until completely smooth.
- Fill the mug to halfway full and place it in the microwave. Bake it for 3 to 4 minutes, or until a cake tester comes out clean. Top with strawberries and whipped cream and serve.
Pumpkin Mug Cake
Ingredients
1 egg
2 tablespoons skim milk
1/4 teaspoon pure vanilla extract
1/4 cup pumpkin puree
7 tablespoons all-purpose flour
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon kosher salt
Makes 1 Serving
Method
- Place all ingredients into a medium bowl. Mix together.
- Pour mixture into a regular sized coffee mug. Microwave on high for 1 minute 30 seconds. If there is any spillage at this point, wipe off side of mug. Continue cooking for an additional 1 minute 30 seconds.
- Garnish with whipped cream & nuts if desired.
Cake Batter Mug Cake
Ingredients
4 tablespoons almond flour
1 tablespoon coconut flour
1 tablespoon vanilla whey protein
1/4 teaspoon baking soda
A pinch of salt
1 egg
2 tablespoons milk
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 tablespoon melted coconut oil
5 drops liquid stevia (optional)
Pinch of sprinkles
Makes 1 Serving
Method
- Combine all ingredients in a small bowl and whisk together.
- Grease a mug and pour batter into it.
- Microwave for 1.5-2 minutes until cake puffs up and is fully cooked.
- Enjoy straight out of mug with milk or remove from mug and top as you like.
Lemon Mug Cake
Ingredients
¾ cup almond flour
1 tbsp sugar
Zest of half a Lemon
1 tsp baking powder
Pinch salt
Juice of half a Lemon
2 tablespoons butter, melted
1 large egg, lightly beaten
Lightly sweetened whipped cream for garnish
Makes 2 Servings
Method
- In a medium bowl, whisk almond flour, sugar, lemon zest, baking powder and salt.
- Add lemon juice, melted butter and egg, and stir until well combined.
- Divide mixture between two microwave-safe mugs and microwave each separately for 1 minute and 20 seconds.
- Remove and top with whipped cream.
Note: Depending on the wattage of your microwave, you may have to increase cooking time.
