Kids school lunches are challenging and it’s even more challenging for busy families. Some schools don’t offer lunch and sometimes, they don’t offer healthy choices. You might compromise and pay for the school lunch but it would be great to figure out figure out a way to have the kid’s lunch packed from home. All it requires is some planning and preparation.

An easy way of planning ahead is adopting a weekly menu which you could stick to for the whole term.

Here is a sample one-week school lunch menu you could adapt.

 

DAY MENU REMARK
MONDAY Homemade Scotch Eggs

Good quality single serve packet of crackers

Carrot Sticks

Orange or tangerine segments

Apple Juice Box

Homemade scotch eggs can be one full one but halved so it’s easy for the child to eat. I would completely make this the day before and refrigerate then heat up in the microwave for about 30 seconds and while you are at it, pack one for yourself too!
TUESDAY Simple Sardine and Mayo Sandwich

Cucumber Sticks

Apple Slices (Soak in fresh orange juice for a few minutes so it does darken)

Cup of yogurt

Make sure you heat up the sardines before use. Drain most of the oil before mashing and then adding a little mayonnaise to bind and add creaminess and flavor. You can make this filling the evening before and refrigerate along with the bread so all you have to do is assemble in the morning. Sandwiches should be cold when you are done.
WEDNESDAY Roasted/Grilled Chicken

Sweetcorn Kernels or sweetcorn on the cob

Coconut Pieces

Watermelon Cubes

Buy some soft chicken, you can do kilos at a time and freeze. Rinse thoroughly and drain excess water then season and leave to marinade a few hours or refrigerate and allow to marinade overnight before placing on an oven tray and into a hot oven to cook
THURSDAY Sauced Gizzard

Grilled or Fried Plantain

Grapes

Cup of Yogurt

FRIDAY Meatballs

Bread rolls

Apple or Orange Juice Box

Nuts and Dried Fruit Mix

Skip nuts if child has nut allergies
