Chipotle Lime Chicken

Chipotle lime chicken is a delicious and flavorful dish that combines the smoky heat of chipotle peppers with the bright tanginess of lime. It’s a popular choice for grilling or baking and can be used in various recipes such as tacos, salads, burritos, or bowls. Here’s a simple recipe to make chipotle lime chicken at home.


INGREDIENTS

  • 2 eggs
  • 3 chicken breasts
  • 3/4 c panko
  • 1/4 c cornstarch
  • 2 tablespoon (tbsp) garlic powder
  • 1 tbsp smoked paprika
  • 1/2 teaspoon (tea spoon) chipotle chili flakes
  • 1 tbsp lime juice
  • 1/4 c adobo sauce
  • 2 tbsp agave
  • for chipotle aioli (sauce)
  • 1/4 c mayo
  • 1 c sour cream
  • 2 chipotle peppers
  • 1/2 lime
  • 1 clove garlic
  1. PREPARATION
    Slice three chicken breasts into 1 cube. Set aside. Set up a dredging station: in a bowl whisk eggs and l in another bowl mix panko, cornstarch, salt + pepper, garlic powder & smoked paprika.
  2. Dip chicken into egg then panko mix; ensure all sides of chicken are well coated. Air fry chicken at 375°F for 13 mins.
  3. While chicken is air frying, make agave-chipotle lime glaze. In a bowl, mix agave, adobo sauce, lime juice, chipotle chili flakes & 3 tbsp water. Dunk chicken into the glaze & give it a quick toss. Air fry again at 375°F for 8 mins.
  4. While chicken is air frying, add all ingredients for chipotle aioli, plus a 1/2 tsp of salt, to a food processor. Process until smooth.
  5. Season with additional salt & lime juice to taste.
  6. Drizzle chicken bites with agave & serve alongside chipotle aioli.
