Meal prepping will save you time, stress and endless visit to the kitchen, allowing you time to do other things as a stay-at-home mum or a busy professional. Spaghetti with veggies is simple to make and storage friendly.

Ingredients:

●1 pack spaghetti
●2 tablespoons olive oil
●2 large onions (chopped)
●2 cloves garlic (minced)
●2 fresh tomatoes (chopped)
●1 red bell pepper (sliced)
●1 carrot (sliced)
●1 green bell pepper (chopped)
●Half of a small cabbage ball (shredded)
●1 teaspoon oregano (optional)
●1 teaspoon thyme
●1 teaspoon curry
●3 seasoning cubes
●Salt to taste
●1/2 cup cooked shredded chicken or beef

Prepping:

Boil water in a large pot, then add the spaghetti. Cook until al dente (firm but not hard), drain, and set aside.
Heat olive oil in a pan, then add chopped onions and garlic. Stir until fragrant. Add chopped tomatoes, sliced red bell pepper, thyme, curry, oregano, seasoning cubes, and salt.
Cook until the sauce thickens, then stir in the shredded chicken or beef. Add the sliced carrots, chopped green bell pepper, and shredded cabbage, then stir-fry for 2 minutes to retain crunch. Add the cooked spaghetti into the sauce and toss well to coat evenly with the veggies and meat.
Serve hot and enjoy every delicious forkful!
