Meal prepping is the plug when life gets busy. A little effort upfront will save you from morning kitchen stress, whether you’re a sit-at-home mum or a busy professional. See the recipes for white rice and sauce with a quick-fix instructions below:

Ingredients:

For Rice:

2 cups basmati rice
1 tablespoon butter
1 teaspoon curry powder
1 teaspoon thyme
2 seasoning cubes
5 cups water

For Sauce:

2 tablespoons olive oil
1 big onion (chopped)
2 tomatoes (blended)
1 red bell pepper (blended)
1 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon thyme
1 seasoning cube
1 chopped bell pepper (optional)
Salt to taste
1 cup shredded chicken or beef (pre-cooked)

Prepping:

Wash the basmati rice thoroughly under running water to remove excess starch. Heat butter in a pot, then add thyme and curry powder. Pour in the washed rice and stir for about 2 minutes to coat it evenly with the butter and spices. Add seasoning cubes and water, then cover and let it cook on low heat until the rice absorbs all the water and becomes fluffy.

For the sauce, heat olive oil in a pan and sauté the chopped onions until translucent. Add garlic and ginger paste, stirring for a minute until fragrant. Pour in the blended tomatoes and red bell pepper, then let it cook until it thickens and the oil separates from the sauce.

Season with thyme, a seasoning cube, and salt. Stir in the shredded chicken or beef and allow it to simmer for another 5 minutes. Add your chopped bell pepper (if you are using) at this time to retain a fresh and crunchy taste.

Serve the fragrant rice with the rich sauce.
