Lemon Cream Dessert Served With Orange Juice
Lemon cream dessert is prepared in simple, attractive and appetising way to supply protein and other nutrients coming mainly from eggs and lemon fruit. Lemon juice which is one of the main ingredients of this dessert is rich in vitamin C, and phytochemicals, a non nutritive substance like (flavonoid and terpenes) which have preventive effects on cancer and other diseases. Although lemon cream dessert contains certain amount of cholesterol, it also contains substances (vitamin C and phytochemicals) that protect the artery / body from the adverse effect of cholesterol. This dessert is enjoyed by children, youths and adults.

Ingredients Quantities
Sugar 1 cup
Corn starch 1/3 (one third) cup
Water 1cup
Egg yoke 3 medium size lightly beaten
Butter 3 tablespoons
Grated lemon
peel 2 teaspoons
Lemon juice 1/2 (half) cup

Whole flour 150g
Cold butter 1/2 (half) cup

Cream soften cheese 1 package (8 ounces)
Confectioners’ sugar 1 cup
Cold milk 2 cup
Baking powder 1 teaspoon
Instant vanilla
pudding mix 2 packages
Vanilla extract 1 teaspoon
Frozen whipped
topping, thawed 1 carton
Method of preparation
In a small saucepan, combine sugar and corn starch, gradually stir in water until smooth.
Bring to boil, cook and stir for 1 minute or until thickened.
Remove from heat.
Stir a small amount of hot filling into egg yoke, return all to the pan, stirring constantly.
Bring to a gentle boil, cook and stir for 1 minute.
Remove from the heat, stir in butter and lemon peel.
Gently stir in lemon juice.
Refrigerate until cool.
In a bowl, pour the flour.
Cut in butter and mix together.
Place the dough into a greased baking pan, bake at 350o for 15-20 minutes until edges are golden brown.
Cool on a wire rack.
In a mixing bowl, beat cream cheese and confectioners’ sugar until smooth, carefully spread over crust.
Spread with cooled lemon mixture.
In another mixing bowl, beat milk and vanilla pudding mixes on low for 2 minutes, beat in vanilla extract.
Fold in half of the whipped topping.
Spread over lemon layers.
Spread with remaining whipped topping.
Chill for at least 4 hours before cutting.
Serve with orange juice.
