Simple Plantain Porridge 

 

Plantain porridge is a dish loved by many in Nigeria, and can be prepared with ripe plantain for the sweet tooth or unripe plantain. However the two can be combined together. However, for the health enthusiast, the green plantain is said to be more beneficial health wise than ripe plantain. Plantains are the star of the dish and can be paired with any protein of your choice to balance out your meal. Here is a simple recipe that takes 20 minutes to prepare.

Ingredients

  • Plantain medium sized Plantains ripe or unripe 
  • 1 fish (smoked fish or fresh fish) 
  • 1 bunch Ugwu leaves or any other green substitute of your choice 
  • 1 large Onion bulb
  • 1 tbl Ground Crayfish
  • 1 spoonful Palm oil
  •  1 seasoning cube 
  •  Salt to taste
  •  Chili or Scotch bonnet (atarodo) Pepper to taste

Method

  1. Peel and chop the following ;onions, pepper 
  2.  Wash the plantain and peel into desired sizes.
  3. Clean the vegetables and get ready for use.
  4. Get your fish cleaned up and ready for use.
  5. put in the chopped plantain in a pot and add water, slightly covering the plantain.
  6. Now add in the chopped pepper, onions, ground crayfish and seasoning cube to taste and salt.
  7. Pour in the palm oil, cover, then leave to cook. 
  8. Add the sliced vegetables and allow to boil for 3 minutes.

With your meal ready you can serve with a desired drink of your choice.
