• 1 cup of rice flour
• 4 very ripe bananas
• 100g of sugar
• Pinch of grated nutmeg
• Water, oil for frying
Method
• Peel bananas and mash them in a bowl, using fork
• Add the rice flour and some water. Mix with a wooden spoon to blend
• Add sugar and nutmeg
• Stir well to make a thick batter consistency and leave for 30 minutes in a cool place
• Heat sufficient oil to fry the mixture
• Add rice flour mixture in spoonful, the mixture should flow and spread out
• When one side is done turn to the other side and fry till done too
• Remove from oil when done and serve hot.
Note: Eggs may be added to improve flavour and food value.
