Pupusas: Salvadoran Food

Pupusas are a traditional dish from El Salvador, made from a corn dough(masa) filled with cheese, beans, or meat. The dough is then formed into a thick, round patty and cooked on a griddle and served with a spicy tomato salsa called curtido.


Asides being the traditional dish of the El Salvadorians, they are however, popular in other Central American countries such as Honduras and Nicaragua. To make pupusas, you will need masa harina (corn flour), water, and your choice of fillings (cheese, beans, meat, etc.). Mix the masa harina and water to form a dough, then roll the dough into small balls.

Flatten each ball and add a spoonful of filling in the centre, then seal the edges to form a disc. Cook the pupusas on a griddle until golden brown on both sides. Serve with curtido or other toppings of your choice.

Recipe for Papusas:

Ingredients:

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1/2 teaspoon salt
  • Filling of your choice (cheese, pork, beans, etc.)

Instructions:

  1. In a large bowl, combine the masa harina, salt, and warm water. Mix until a dough forms.
  2. Knead the dough for a few minutes until it becomes smooth and pliable.
  3. Divide the dough into small balls, about the size of a golf ball.
  4. Flatten each dough ball and place a spoonful of filling in the centre.
  5. Fold the dough over the filling, sealing it inside and forming a thick patty.
  6. Heat a griddle or skillet over medium heat and place the papusas on the griddle.
  7. Cook for about 3-4 minutes on each side, or until the dough is cooked through and slightly crispy on the outside.
  8. Serve the pupusas hot, with a side of curtido (pickled cabbage) or salsa.
