Ingredients:

  • Skinless and boneless chicken thighs
  • Coconut milk
  • Soy sauce
  • Brown sugar
  • Curry powder
  • Peanut butter (creamy)
  • Fish sauce
  • Salt
  • Pepper
  • Garlic cloves
  • Sweet potatoes, cut into ½-inch thick slices
  • Diced tomatoes
  • Water
  • Cornstarch


Procedure:

1. Combine coconut milk, brown sugar, peanut butter, fish sauce, curry powder, garlic, salt, and pepper. Mix the tomatoes afterwards.

2. In a 5 or 6-quart slow cooker, put sweet potatoes and place the chicken on top.

3. Pour in the tomato mixture and cook with a lid on for 5 to 6 hours, or until the chicken becomes tender.

4. Remove the chicken and sweet potatoes, then keep them warm on the side. 5. Put the cooking liquid in a saucepan.

6. Mix water and corn flour in a small bowl until smooth. Add it to the saucepan.

7. Boil and mix for 1 to 2 minutes until it becomes thick.

8. Serve this sauce with potatoes and chicken.
