Spicy Nigerian Pepper Soup

Ingredients

  • 500g assorted meats (goat meat, cow meat, chicken, or fish)
  • 2 tablespoons ground pepper soup spice mix
  • 2 tablespoons ground crayfish
  • 2 tablespoons scent leaves, uziza, utazi or basil leaves (optional)
  • 2 tablespoons chopped onions
  • 2 cloves of garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 liters of water
  • Salt and pepper to taste

Instructions

1. Wash and cut the assorted meats into bite-sized pieces.
In a pot, combine the meats, chopped onions, minced garlic, grated ginger, ground crayfish, and pepper soup spice mix.

2. Add water to the pot and bring the mixture to a boil. Reduce heat to simmer until the meats are tender, and the flavours meld together.

3. Add aromatic herbs, if using, add scent leaves or basil leaves to the pot, stirring well. Allow the soup to simmer for an additional 5-10 minutes.

4. Adjusting your seasoning, taste the soup and adjust the seasoning with salt and pepper to your liking.
