Fruit cake is a moist cake dense in fruit delight. The method of making this moist yummy fruit cake is easy and simple and can be served as a snack to guests or wrapped as snacks for children to take to school.

This recipe can be spiced more with fresh fruits like strawberries and topped with dates for extra sweetness. 

 Ingredients

  • 250 grams 2 cups of Plain Flour /all-purpose flour
  • 250 grams of Butter at room temperature
  • 4 Eggs 
  • 170 grams Sugar
  • 11⁄4 tablespoonful Baking powder
  •  1 tablespoonful of vanilla or butterscotch flavour
  • ½ cup Brandy or Rum
  •  1⁄4 cup Browning
  • 1 handful of mixed Dry fruits raisins, sultanas, currants, cherries
  •  1 teaspoon citrus peels of orange, lemon or grapefruit peel
  • ½ teaspoon Ground Nutmeg & Cinnamon

Method

  1. Put the fruit and the citrus peels in alcohol to soak for 3days or even a month. If it is to be used soon, boil in a pot for ten minutes add 2 tablespoons of sugar and one-quarter cup of water and bring to a boil. Strain afterwards add in alcohol and leave to cool.
  2. Get the pan ready by lightly greasing the pan with butter and then dusting it off with flour to prevent sticking.
  3. Preheat the oven to 150ºC or 300ºF for 15 minutes. 
  4. Sift the flour and baking powder and keep aside.
  5. In a cake mixer, cream the butter until it is fluffy and add in the sugar and continue mixing till the sugar dissolves and the mix becomes fluffy.
  6.  Break the eggs into a bowl and gradually add the eggs into the fluffy butter and continue mixing. In the absence of a mixer, a bowl can be used to mix.
  7. The browning flavour can now be added together with the fruits soaked in alcohol
  8. Add the flour mixed with baking powder gradually into the mix until perfectly merged.
  9. Pour the cake mixture into the cake pan and smooth it out with a spatula.
  10.  Now put in the preheated oven for an hour at 150ºC or 300ºF which all depends on how fast the oven being used bakes. 
  11. Check the cake 45 minutes after it is put into the oven. To Be certain the cake is ready, poke the centre of the cake and if it comes out clean, then the cake is ready.
  12. Leave the cake in the pan to cool for ten minutes, then turn it over and leave to cool down.
