Ingredients
• 2 cups of long-grain parboiled rice
• 1/2 cup of vegetable oil
● 1 large onion, finely chopped

● 3 red bell peppers, blended

● 4 ripe tomatoes, blended

● 3 cloves of garlic, minced

● 1 teaspoon of thyme

● 2 bay leaves

● 2 cups of chicken broth

● Salt and pepper to taste

For the Chicken:
● 1 whole chicken, cut into pieces
● 2 tablespoons of vegetable oil
● 1 teaspoon of paprika
● 1 teaspoon of onion powder
● 1 teaspoon of garlic powder
● Salt and pepper to taste

Instructions:
1. Prepare the Chicken:
Rub the chicken pieces with a mixture of paprika, onion powder, garlic powder, salt, and pepper.
Heat vegetable oil in a pan and sear the chicken until golden brown on both sides. Set aside.

2. Cooking the Jollof Rice:
In a pot, heat vegetable oil and sauté the chopped onions until golden brown.
Add minced garlic, blended red bell peppers, and tomatoes. Cook until the mixture thickens and the oil begins to separate.
Stir in thyme, bay leaves, salt, and pepper.
Rinse the parboiled rice and add it to the pot, stirring to coat it with the flavorful mixture.
Pour in chicken broth and bring the mixture to a boil. Reduce heat, cover, and let it simmer until the rice is cooked and has absorbed the delicious flavours.

Finishing Touches:
Place the seared chicken pieces on top of the cooked jollof rice, allowing the flavors to meld.
Cover the pot and let it simmer for an additional 10-15 minutes until the chicken is cooked through and the rice is fluffy.

Serve and Enjoy:
