Chicken kebab is a simple and delicious dish that combines marinated chicken pieces with colourful vegetables, all grilled to perfection. It brings together a blend of aromatic spices and fresh parsley, infusing the chicken with rich flavours that will surely impress your guests.

 

Ingredients

For the chicken marinade:
Chicken (breast and thighs, cut into chunks)
2 tablespoons oil
1 tablespoon fresh parsley, finely chopped
1 teaspoon salt
1 seasoning cube
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon coriander powder
1 teaspoon black pepper
1 teaspoon celery powder
1 teaspoon ginger powder
1 teaspoon garlic powder

For the vegetables:
1 red bell pepper, chopped into chunks
1 yellow bell pepper, chopped into chunks
1 green bell pepper, chopped into chunks
1 medium onion, chopped into chunks

Instructions

Cut the chicken breast and thighs into medium chunks. In a large bowl, combine the chicken with chopped parsley, oil, salt, and all the seasonings. Mix thoroughly to coat the chicken evenly, then cover and let it marinate for at least 30 minutes.
While the chicken marinates, soak the wooden skewers in water for 30 minutes to prevent them from burning during cooking. Chop the red, yellow, and green bell peppers and the onion into similarly sized chunks.

Once the chicken is marinated, assemble the kebabs. Alternate threading the marinated chicken and vegetables onto the soaked skewers. For a colourful presentation, you might follow a pattern: red bell pepper, chicken, onion, green bell pepper, chicken, yellow bell pepper, and repeat until the skewer is filled.
Preheat your grill or oven to medium-high heat. Place the skewers on a lined oven tray or directly on the grill. Cook the kebabs for 10–15 minutes on each side, turning occasionally, until the chicken is fully cooked and slightly crispy.

Serve hot with your favourite side dish.
