Corn Salad
Corn is still in season. If you are bored with roasted and boiled corn, here is an easy-peasy one to try.
INGREDIENTS
Fresh corn
1 chopped cucumber
1 cup halved tomatoes
½ cup Chopped fresh coriander
1 Avocado
½ cup chopped onion
¼ Olive oil
½ tbsp Garlic Powder
2 tbsp Lemon juice
½ tbsp. smoked paprika
½ tbsp Roasted Cumin Powder
Pepper
Salt
METHOD
1. Peel the kernels off with a knife and roast for 5-6 minutes, stirring in between until they are charred. Set aside and allow to cool.
2. In a bowl, mix the chopped onion, cucumber, tomatoes, and coriander thoroughly. Add the corn and set aside.
3. In another bowl, pour the garlic powder, lemon juice, avocado, cumin powder and stir well.
4. Drizzle the desired amount of dressing over the salad mix and combine.
Serve.
