The combination of fish and eggs in your meal is one way to get a lot of nutrients without having to break the bank. Fish is rich in Omega3 fatty acids that ate crucial for the body and brain functions. It also reduces the risk of autoimmune diseases. Fish and Eggs support heart health by reducing risks of heart attack and strokes and egg yolk prevents cataracts.

INGREDIENTS

  • Fish
  • 3 large eggs
  • 6 fresh tomatoes (diced)
  • Pepper (blended or diced)
  • Cooking oil
  • Ginger (minced)
  • 1 large onion (diced)
  • Spring onion (sliced)
  • 2 Seasoning cubes
  • Salt

METHOD

  1. In a large pot, heat up the oil on medium heat. Add onion and ginger and stir-fry for 1 minute. Add tomatoes and pepper, stir and allow to cook for 5-7 minutes. Pour the seasoning cubes and salt.
  2. Add the fish and cook for 6 minutes or until the fish is tender. Pour the eggs, cover the pot and allow to cook for 5 minutes.
  3. Stir in the eggs to mix thoroughly, then the spring onion.
  4. Serve with your preferred carbohydrate.

NOTE: The eggs should not be whisked. Break into a small bowl and leave it.

STIR-FRIED COUSCOUS

INGREDIENT

  • Couscous
  • Chicken (diced)
  • Cooking oil
  • Onion
  • Carrot (diced)
  • Green bell pepper (diced)
  • Red bell pepper (diced)
  • Red pepper (diced)
  • Soy sauce
  • Seasoning cubes
  • Salt

METHOD

  1. In a pot, pour water, add salt land add the couscous. Allow to cook until tender then drain and set aside.
  2. In a saucepan, heat up your cooking oil on medium heat, put the chicken, add seasoning cubes and stir-fry until golden brown. Add the onion, garlic, pepper and stir for 3 minutes.
  3. Add the bell peppers and soy sauce and stir to mix thoroughly.
  4. Pour in the couscous and stir to combine carefully.

Serve.
