Golden, crunchy, and oozing with cheesy goodness, this grilled cheese sandwich turns your kitchen into a café of comforting, melty, mouthwatering memories.
Ingredients (Serves 2):
●4 slices thick bread (white, sourdough, or whole wheat)
●4 slices of cheddar or mozzarella cheese (or a mix)
●2 tablespoons unsalted butter (softened)
●1 tablespoon mayonnaise (optional)
●½ cup spinach leaves (fresh or sautéed lightly)
●½ small red bell pepper, thinly sliced
●½ small onion, caramelised or sliced thin
●1 small tomato, sliced (deseeded)
●A pinch of black pepper or chili flakes (optional)
Instructions:
Spread softened butter (and mayo if using) on one side of each bread slice.
Place two slices of bread, buttered-side down. Add 2 slices of cheese to each, followed by spinach, bell pepper, tomato slices, and onions. Top with remaining cheese slices for maximum melt, then place the other bread slice on top, buttered-side up.
Place sandwiches in a non-stick pan over medium-low heat. Press gently and grill each side for 3–4 minutes, or until the bread is golden and cheese is gooey.
Slice in half and serve immediately. You can pair it with a fresh salad or tomato soup, or just enjoy it on its own. It’s crunchy, colourful, and cheesy.
