This Indian delicacy combines the finest spices with tender bits of lamb. It’s quite easy to make some lamb curry, and you’ll have this recipe to guide you every step of the way. 

Ingredients 

  •  Chopped lamb
  • Onions
  • Garlic
  • Olive oil 
  • Curry powder 
  • Salt 
  • Black pepper
  • Ground coriander
  • Cumin
  • Rosemary 
  • Thyme
  • Lemons
  • Apples 
  • Golden raisins 
  • Chicken stock 
  • Potatoes 
  • Basmati rice
  • Chutney and/or yoghurt to serve

Method 

  1. Start by browning the meat and heating some olive oil in a pan on medium heat. Lightly fry the lamb on both sides until it’s slightly brown.
  2. Lower the heat and add curry powder to the oil; cook for a minute or two. Add some onions and garlic, allowing to cook properly.
  3. Add the lamb to the pan and spice with coriander, black pepper, cumin, rosemary, thyme, sliced lemon, apples, raisins, chicken stock, and salt.
  4. Cook the curry on low heat until the lamb meat softens for about 2 hours. 
  5. Add some potatoes and cook for another 45 minutes.
  6. While the curry is cooking, boil basmati rice in a medium thick-bottomed pot. Add some water, a tablespoon of butter and salt. Bring to a boil, lower the heat to a low simmer, cover the pot and let cook for 15 minutes.
  7. Remove the pot from heat and let steam for 10 minutes before fluffing with a fork. 
  8. Serve the curry and rice with some basil leaves for an extra taste.
