How To Prepare Suya Jollof Rice

It’s no secret that there is an inseparable bond between Nigerians and Suya. However, if there is one food Nigerians love more than suya and are ready to drag the entire twitter-verse for, it would be jollof rice.
So, imagine these two food items coming together to create a masterpiece called Suya Jollof rice. In this article, we teach you how to prepare this mouthwatering delicacy.

Ingredients

· Groundnut oil
· Onions
· Rice
· Tomato paste
· Pepper
· Fresh Tomatoes
· Seasoning cube
· Thyme and curry
· Salt
· Grounded pepper
· Chopped suya meat
· Bay leaves
· Chicken/fish/beef stock
· Carrots, Green peas and spring onions

Method

  1.  Blend your fresh tomatoes and pepper.
  2.  Allow your pot to heat up for a minute before pouring groundnut oil into it. Once the oil is heated, add chopped onions and allow to fry until they turn golden brown. After frying the onions, pour blended tomatoes and pepper along with a sachet of tomato paste into the pot, and also allow to fry. Ensure to stir the pot consistently.
  3. Wait for it to fry for 10-20 minutes before adding chicken, beef or fish stock. Also add your seasoning cube, curry, thyme, pepper, salt and thyme to the mix. Boil for 10 minutes.
  4. Prior to this, make sure you parboil the rice. Now, you will add your parboiled rice to the pot. Mix very well with the tomato stew.
  5. Add chunks of suya meat and bay leaves. Cover the pot. Allow it to cook for 10-15 minutes
  6. Remember to occasionally check your pot in case there is a need to add more water or stock.
  7. When the Suya jollof rice is almost getting ready, throw in your diced carrots, green peas, and spring onions. Allow to simmer for 5 minutes.
  8. Upon noticing the water had dried up and your rice is edible, your food is ready. Serve with any beverage of your choice and sides like plantain or beans.
