Ingredients

1 pound large shrimp, peeled and deveined
12 ounces pasta (fettuccine or spaghetti)
2 tablespoons olive oil
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
½ cup chicken broth
1 cup heavy cream
¼ cup grated Parmesan cheese
¼ teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper, to taste
Fresh basil or parsley, chopped, for garnish

Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

In a large pan over medium heat, warm the olive oil. Season the shrimp with salt and pepper, then cook for 2-3 minutes per side until they turn pink and are just cooked through. Remove the shrimp from the pan and set aside.

In the same pan, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes and cook for another minute.

Pour in the chicken broth, bringing the mixture to a simmer while scraping up any browned bits from the bottom of the pan. Add the heavy cream and let it come to a gentle simmer.

Gradually whisk in grated Parmesan cheese until the sauce is smooth and slightly thickened.
Return the shrimp to the pan, stirring to coat evenly with the sauce.

Add the cooked pasta and toss to ensure every strand is well-coated with the sauce. If the sauce is too thick, add a splash of the reserved pasta water until the desired consistency.

Season with red pepper flakes (if using), salt, and freshly ground black pepper to taste.
Garnish with chopped fresh basil or parsley.

Serve immediately and enjoy!
