Miyar Zogale (Moringa Soup)

There are diverse ethnic groups in Nigeria. In the Northern part of Nigeria is a popular miracle fruit called Moringa. Dubbed the Miracle tree, it contains Vitamins B1, B2, B3, B6 Calcium, Potassium, Vitamin C, Iron, Zinc, and Magnesium. There are benefits of Moringa: It protects the liver, nourishes the skin and hair, prevents and helps to treat cancer, fights against bacterial diseases, among others.

Ingredient

  • Moringa leaves
  • Assorted beef
  • Kpomo
  • 2 large onion
  • Palm oil
  • Ginger
  • Curry and thyme
  • ½-cup white beans
  • 1 tsp groundnut paste
  • 2 pieces Tomato
  • Pumpkin chunks
  • 8 scotch bonnet
  • 3 shombo
  • Spring onion
  • Seasoning cubes
  • Salt

Method

  1. Wash your vegetables and set aside.
  2. In a large pot, put the meat, two seasoning cubes, salt and onion and cook for 10 minutes. Add kpomo, tomatoes pepper and pumpkin chunks and cook for 20 minutes until both are tender. Remove the vegetables when soft and mash.
  3. Put your washed beans in another pot and cook for 20 minutes or until soft.
  4. Pour palm oil in a saucepan and heat up on medium heat. Add onion and stir-fry for 2 minutes then put the meat and fry until brown.
  5. Add the mashed vegetables and fry for 2 minutes. Add the cooked beans and stir-fry for 3 minutes.
  6. Put the groundnut paste into your meat stock and mix thoroughly. Pour the mixture into the vegetable and beans mix and stir, allowing to cook for 2 minutes on low heat.
  7. Add seasoning cubes (if necessary), spring onion and cook for 1 minute. Add the moringa leaves and stir. Pour ½-cup water and simmer for 5 minutes.

Serve with tuwon shinkafa or biskin masara.

Cinnamon Roll Cheesecake

Thinking of a perfect simple dessert can be brain tasking, especially if you have limited ingredients and need something to snack on while chilling with friends or watching a film with loved ones.

Ingredient 

  • 450g cream cheese
  • 2 eggs
  • ½ cup butter
  • 2 tbsp cinnamon powder
  • 1 tbsp vanilla extract
  • ½ cup sugar
  • ½ cup sour cream
  • 1 cup brown sugar
  • 1 pack cinnamon rolls

Method

  1. Preheat oven to 3250F/1600C.
  2. In a medium-sized bowl, beat the cream cheese and sugar until smooth. Add the sour cream and vanilla extract and whisk thoroughly.
  3. Add the eggs and mix. Set aside.
  4. In another bowl, put the butter, brown sugar and cinnamon powder and mix until fully combined. Set aside.
  5. In a greased pan, press some of the cinnamon rolls flat, until it covers the bottom of the pan. Evenly spread the cheesecake batter then drop a spoonful of the butter mixture onto the batter.
  6. Spin the butter mixture into the cheesecake batter using a knife but try to keep it away from the edges.
  7. Bake for 35 minutes until the cheesecake is firm around the edges but still slightly jiggly in the middle.
  8. Remove and cool completely. Refrigerate for 4-5 hours.
