Plantain burger

Plantain is a favourite in many Nigerian households, but did you know there are creative new ways to enjoy this golden staple? You’ve probably heard of plantain frittata, but have you ever tried a plantain burger? We got in touch with food blogger Omoye Cooks to share her unique recipe with us.

Ingredients:

Vegetable oil
Plantains
Parsley
Bell peppers
Onions
Butter
Garlic powder (or other spices of choice)
Carrots
Mozzarella cheese
Suya spice
A clean kitchen towel
Cabbage

Instructions:

Peel the plantains and heat a little vegetable oil in a pan over medium heat.

Add some parsley to the oil, then fry the plantains on low heat, turning them over until golden and soft.

Remove the fried plantains, place them on clean parchment paper, and gently flatten them with your palms or the back of a spoon. Set aside.

Chop the bell peppers and onions into thin strips. In the same pan, fry the chopped bell peppers and onions. Add butter, parsley, and a pinch of garlic powder for flavour.

Add mozzarella cheese and your choice of cooked beef to the pan. Add a small amount of water and let it steam until the cheese melts.

Spread the melted cheese mixture over the flattened plantains.

Layer with shredded cabbage, grated carrots, fried bell peppers, and a sprinkle of suya spice for extra flavour.

Place another flattened plantain on top to assemble your plantain burger.
