Ingredients

  • 1 kg (2.2 lbs) of skopo (sheep head)
  • 2 large onions, finely chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 2 tablespoons of vegetable oil
  • 2 teaspoons of curry powder
  • 1 teaspoon of ground paprika
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving

Instructions
1. Begin by cleaning the skopo thoroughly and rinse them under cold water.

2. Place the cleaned skopo in a large pot and cover them with water. Bring the water to a boil, then reduce the heat and let them simmer for about 10-15 minutes. This will help soften them and remove any impurities. Drain and set aside.

3. In a large, heavy-bottomed pot or skillet, heat the vegetable oil over medium heat. Add the finely chopped onions and minced garlic, and sauté until they become translucent and fragrant.

4. Stir in the curry powder, ground paprika, ground coriander, ground cumin, dried thyme, salt, and pepper. Allow the spices to cook for a couple of minutes until they release their flavours and create a fragrant base for the dish.
