Recipe For Mediterranean Pineapple Cake


To make a pineapple cake that aligns with the Mediterranean diet, you will need the following ingredients:

  • 2 cups of whole wheat flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of extra-virgin olive oil
  • 1/2 cup of honey
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of plain yogurt
  • 1 cup of crushed pineapple (drained)

    Instructions:
  • Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with a little bit of olive oil.
