Beta-Glucan: The science behind Elkris Foods’ blood-sugar-friendly oat products

As diet-related conditions such as type 2 diabetes rise across Nigeria, attention is turning to a fibre once confined to nutrition labels: beta-glucan. Found in oats and barley, this soluble fibre is at the centre of a growing body of clinical research, and it is the formulating principle behind Elkris Foods’ range of swallow alternatives, including its flagship Super-Oat product.

Beta-glucan dissolves in water to form a thick gel in the stomach and small intestine. That gel slows how quickly food leaves the stomach, limits how fast digestive enzymes can break down starch, and appears to interfere with glucose absorption at the intestinal wall. The combined effect is a slower, more gradual rise in blood sugar after eating, rather than the sharp spike associated with refined carbohydrates.

The evidence is well established. The European Food Safety Authority has approved a formal health claim for oat and barley beta-glucan’s effect on post-meal blood glucose, and a 2021 meta-analysis of more than one hundred controlled trials found that oat beta-glucan reduced post-meal blood glucose response by roughly twenty-three percent on average, a benefit that held whether or not participants had diabetes.

Not all oats deliver this effect equally. Researchers note that the benefit scales with how much beta-glucan a product actually contains, and that the fibre must be of a high enough molecular weight to form its gel; heavily processed beta-glucan is considerably less effective. This is the gap Elkris Foods says it has built its product range around. Super-Oat is formulated using whole oats fortified with additional beta-glucan to raise fibre content beyond what plain oats typically offer, while the company’s Oat Flour, Oat and Fibre Flour, and Instant Plantain Flour, the latter made from unripe rather than riper plantain, apply the same underlying logic of slowing how quickly a carbohydrate releases sugar.

For a country where carbohydrate-heavy swallows are a daily staple, the research suggests the issue is not carbohydrates themselves but how quickly they release sugar into the bloodstream, a distinction Elkris Foods says has shaped its formulation approach across the board.

Beta-glucan is not a treatment for diabetes, and no single ingredient replaces medical advice or a balanced diet. But the evidence supports a more modest claim: meals built around adequate, high-quality beta-glucan produce a gentler blood sugar response, a factor Elkris Foods says is increasingly relevant to Nigerian consumers rethinking their everyday carbohydrate choices.
