Mushrooms are delicious and healthy. 

Enjoy mushroom soup with some roasted vegetables, cheesy scalloped potatoes, or garlic parmesan cheese bread by following this recipe. 

Ingredients 

  • Unsalted butter
  • Sliced fresh mushrooms
  • Salt
  • Yellow onion, diced
  • All-purpose flour
  • Fresh thyme
  • Peeled garlic cloves
  • Chicken broth
  • Water
  • Whipping cream
  • Salt and freshly ground black pepper to taste
  • Fresh thyme leaves 

Recipe 

  • Start by melting some butter in a large soup pot on medium-high heat. Next, cook mushrooms in butter, adding just a pinch of salt. 
  • As the mushrooms give out their juices, reduce the heat to low and stir often until juices evaporate and the mushrooms turn golden brown. Set aside some mushroom slices to use as a garnish later. 
  • Mix onions into mushrooms and cook until the onion is soft and translucent. 
  • Stir some flour into the mix and cook, stirring for about two minutes. 
  • Tie thyme sprigs into a small bundle using kitchen twine and add to the mushroom mixture alongside garlic cloves. Pour chicken stock and water into mushroom mixture. Bring to a simmer and cook for 1 hour. Remove thyme bundle.
  • Pour some soup into a blender in small batches and blend until the paste is smooth and thick.
  • Return the soup to the pot and stir in cream.
  • Season with salt, black pepper, and serve garnished with mushroom slices and thyme leaves.
