Do you have a sweet tooth and will rather eat a sweet potato porridge over a bowl of yam porridge? Sweet potato is a dish that can satisfy that craving. Here is a simple easy recipe to help create the perfect sweet potato porridge in a few minutes.
Ingredients
- 6 big potatoes(cubed in sizable pieces)
- 1 large size dry fish
- 1 cup of dried prawns (optional)
- 1 large onion, diced
- 2 tablespoons of fresh ground yellow pepper
- 1 large-sized garlic chopped
- A handful of scent leaves, chopped (optional)
- 1 serving spoon of palm oil
- Salt to taste
- Seasoning to taste
Method
- Cut and clean up the sweet potatoes, dice them into cubes.
- Boil 2 cups of water till it’s hot, add a pinch of salt and add your diced potatoes. Boil for 15 minutes
- In a smaller pan, pour a spoonful of palm oil, heat up and add sliced garlic, onions and simmer for 3 minutes.
- Add the dry fish, dry prawns, blended pepper, salt and seasoning cubes
- Pour the sauce into the boiling pot of boiling sweet potatoes and lightly stir. Boil for another 5 to7 minutes
- Add the fresh scent leaves and stir in to boil for 3 minutes
Sweet potato porridge is ready and serve with a drink of choice.
