A pudding is a type of dessert that can be made from various ingredients such as milk, cream, sugar, flour, and eggs. Puddings can be served in a variety of forms, including custards, mousses, and steamed dishes. They can be eaten as a standalone dessert or used as a topping or filling for cakes, pastries, and other desserts.

Here are five types of pudding and their basic recipes:

Vanilla Pudding
Mix 1/3 cup sugar, 3 tablespoons cornstarch, and 1/4 teaspoon salt in a medium saucepan.
Gradually whisk in 2 cups milk until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 2 teaspoons vanilla extract.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.

Chocolate Pudding
Mix 1/2 cup sugar, 1/4 cup unsweetened cocoa powder, 3 tablespoons cornstarch, and 1/4 teaspoon salt in a medium saucepan.
Gradually whisk in 2 cups milk until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 2 ounces chopped chocolate or 1/4 cup chocolate chips.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.

Rice Pudding
In a medium saucepan, bring 1 cup water, 1/4 cup uncooked white rice, 1/4 teaspoon salt to a boil.
Reduce heat to low, cover and simmer for 18-20 minutes or until rice is tender.
Stir in 1 cup milk, 1/2 cup sugar, 1/2 teaspoon vanilla extract, and a pinch of cinnamon.
Cook for an additional 10-15 minutes or until the pudding is thickened.

Lemon Pudding
Mix 1/2 cup sugar, 3 tablespoons corn-starch, and 1/4 teaspoon salt in a medium saucepan.
Gradually whisk in 2 cups milk and 3 tablespoons lemon juice until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 1 teaspoon lemon zest.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.

Bread Pudding

Butter a 9×13 inch baking dish.
