This recipe is actually Chinese in origin but very popular in other parts of the world too. Ingredients

16 to 20 large pieces shrimps

2 ½ tbsp. vegetable oil

10 large shiitake mushroom (Optional)

1 tsp granulated sugar

2 small tomatoes

1 ginger

1 garlic glove

4tbs, spicy chili paste

1 cup Chicken stock

1 tbsp. Potato starch (same amount of water-for thick sauce)

2 tbsp. Potato starch (to put in the shrimp bowl)

Sauce

Salt and pepper —pinch

Sugar —1 1/2tbs

Sake —1tbs

Direction For Shrimp

Cut Shrimp head and tail off, peel shrimp, cut and set aside. Put salt and pepper on the shrimps. Put shrimp in the bowl and add potato starch and mix it. Put in low heat oil and deep fry it. When colour changes, take off quickly from heat.

In a separate plate, put oil in the pan and heat it up on medium heat. Put tomato and cook until nice consistence. Add other vegetables and stir. Add chili paste and chicken stock mixture until simmer and add other sauce ingredients. Then add your already fried shrimps and cook about 2 min. Finally, add potato starch with water and make sauce thicker. Turn heat off and serve with rice, salad or any other palatable food.
