In this recipe, we invite you to embark on a gastronomic journey that not only pays homage to the country’s heritage, but also celebrates the unity in diversity that defines Nigeria.
‘Arayara Oka’ is a traditional Nigerian dish, particularly, popular in the Nsukka region. It’s a flavourful combination of corn and vegetables. Here’s a recipe for you:
Ingredients:
- 2 cups of fresh corn kernels
- 1 cup of fio fio (cowpea)
- 2 cups of assorted vegetables (ugu leaves, spinach, or any leafy greens)
- 1 medium-sized onion, finely chopped
- 2-3 cloves of garlic, minced
- 2-3 tablespoons of palm oil
- 1 teaspoon of ground crayfish
- 1 teaspoon of ground pepper (adjust to your spice preference)
- Salt to taste
- Water for cooking
Instructions:
Prepare The Fio Fio:
1. Rinse the fio fio beans thoroughly to remove any dirt or debris.
2. Place the fio fio beans in a pot, add enough water to cover them, and bring to a boil.
3. Reduce the heat and simmer for about 30-40 minutes or until the fio fio beans are tender and add salt to taste at this point. Add more water if needed during cooking.
4. Drain the cooked fio fio beans and set aside.
Cook The Blended Corn:
1. In a separate pot, add the fresh corn kernels and enough water to cover them.
2. Boil the corn for about 15-20 minutes or until it becomes tender but not mushy.
3. Drain the cooked corn and set it aside.
Prepare The Vegetables:
Wash the assorted vegetables thoroughly and chop them into bite-sized pieces.
Prepare The Sauce:
1. In a large frying pan or saucepan, heat the palm oil over medium heat.
2. Add the chopped onions and minced garlic. Sauté until the onions become translucent.
3. Stir in the ground crayfish and ground pepper. Cook for another 2-3 minutes to release their flavours.
4. Add the cooked fio fio beans to the pan and stir to combine with the seasonings.
5. Add the cooked corn kernels and stir well to incorporate all the ingredients.
6. Finally, add the chopped vegetables and continue to cook for 5-7 minutes until the vegetables are wilted but still vibrant green.
7. Season the dish with salt to taste and stir to evenly distribute the flavours.
Once everything is well combined and heated through, remove the pan from heat.
