Shawarma is a Middle Eastern dish made of marinated meat that is cooked on a rotating vertical spit. The meat is typically either chicken, lamb, beef, or a combination of these. It is then thinly sliced and served in a wrap or pita with fresh vegetables, hummus, tahini, and other condiments. Follow this detailed recipe to make shawarma at home. 
Ingredients
-1 pound boneless, skinless chicken thighs
-1/4 cup olive oil
-3 tablespoons lemon juice
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1 teaspoon garlic powder
-1/2 teaspoon paprika
-1/2 teaspoon ground cinnamon
-1/2 teaspoon ground cardamom
-1/2 teaspoon ground allspice
-1/4 teaspoon ground nutmeg
-1/4 teaspoon ground black pepper
-Sea salt, to taste
-1/2 large onion, sliced
-1/2 red bell pepper, sliced
-4-6 pitas
-Tahini sauce
-Cucumbers, sliced
-Tomatoes, sliced
-Red onion, sliced
-Lettuce, shredded
-Feta cheese, crumbled
 
Method
 
1. Preheat oven to 375°F.
 
2. Place chicken thighs in a shallow baking dish.
 
3. In a small bowl, combine olive oil, lemon juice, cumin, coriander, garlic powder, paprika, cinnamon, cardamom, allspice, nutmeg, black pepper, and salt. Mix together until evenly combined.
 
4. Pour the oil and spice mixture over the chicken and use your hands to rub it in until the chicken is evenly coated.
 
5. Arrange the sliced onion and bell pepper around the chicken.
 
6. Bake in preheated oven for 25 minutes, or until chicken is fully cooked.
 
7. Remove from oven and let cool slightly.
 
8. Cut the chicken into thin strips.
 
9. Heat pitas in a skillet over medium heat until lightly toasted, about 2 minutes per side.
 
10. Place the chicken strips onto the heated pitas.
 
11. Top with tahini sauce, cucumbers, tomatoes, red onion, lettuce, and feta.
 
12. Serve warm. Enjoy!
