Let’s go back to childhood, shall we? Growing up, there were sweets that we loved and we always looked forward to getting them at shops after school. Fortunately, goodies (see what we did there?) like coconut candy, baba dudu, and even groundnut cake, are still being made and we bet some indulge in it as it evokes childhood memories. Some even go as far as purchasing it so that the younger generation savours each taste. Today is for Groundnut cake.

INGREDIENTS
1 cup Fried groundnut
½ cup sugar
METHOD
Pound the groundnuts, put into a blender and blend coarsely and set aside.
In a frying pan, pour the sugar, set the heat on low and allow to fry until caramelized.
Add the groundnuts and stir until well combined. Remove from fire and pour content on a board.
Use a rolling pin to roll but don’t allow it to flatten, then use a knife to cut into your desired shape.
Allow to cool for 3-5 minutes.
Enjoy.
