Peanut Butter Rice Cake
Peanut Butter Rice Cake is the perfect snack or dessert to curb a sweet tooth. It is made from puffed rice pressed together into a circular shape. They are shelf-stable, crunchy, and versatile.
Rice cakes come in a variety of flavours but watch for sugar and sodium content. We recommend using brown rice cakes or multigrain rice cakes.
- Rice cake
- Peanut butter
- 2 tbsp chocolate chips
- 1/2 tsp coconut oil
- Coarse sea salt
1) Layer a generous amount of your favourite peanut butter or nut butter of choice on a rice cake. Then top with thinly sliced bananas.
2) In a small bowl, microwave chocolate chips and coconut oil in 30-second increments. Once completely melted, pour over top bananas and disperse evenly. Sprinkle it with coarse salt.
3) Freeze for 20 minutes, then break into it and serve your delicious peanut butter rice cake.
