Tomato sauce refers to a variety of tomato-based sauces that are often served as part of a meal rather than as a side dish.
Tomato sauces are commonly used for meat and vegetables, but they’re best recognized as the base for carbs like rice and spaghetti dishes.
Tomatoes have a deep taste, a high water content, a soft flesh that breaks down easily, and the proper composition to thicken into a sauce without the use of thickeners.
All of these characteristics make them great for easy-to-make sauces.
INGREDIENTS
- Fresh plum tomatoes (strong)
- Protein of your choice(preferably chicken)
- Cabbage
- Carrots
- Green pepper
- Spring onions
- Green peas
- Scotch Bonnet pepper
- Onions
- Vegetable/sunflower oil
- Seasoning cubes to taste
- Salt to taste
- Curry powder
- Dried thyme
METHOD
- Season the chicken with all the spices of your choice and boil till tender. Set it aside.
- Chop all vegetables into large chunks and set aside.
- Add some oil to a saucepan or pot. Add the onions and some Seasoning cubes, a little curry and salt to taste.
- Now add the tomatoes and green peas and stir fry for about 15 mins.
- Add the chicken and chicken stock into the tomato and bring to a boil.
- Add all the vegetables starting with the carrots.
- Allow to cook for about 2 to 5mins on high heat depending on how tender you like your veggies.
- Bring down from heat and serve with rice, potatoes, yam, spaghetti or plantain.
