The sweetness of fresh palm wine, also known as palmy, pairs beautifully with the sharp zest of lime and the clean fizz of club soda. It’s light, crisp, and the ultimate refreshing drink to serve alongside rich, spicy dishes.

Ingredients

  • Fresh Palm Wine – 120 ml (4 oz), chilled
  • Club Soda or Sparkling Water – 60 ml (2 oz), chilled
  • Fresh Lime Juice – 15 ml (0.5 oz)
  • Ice cubes – Handful

Instruction 

  • Take a clean highball glass or a wine glass and fill it generously with ice cubes. Keeping the glass cold helps maintain the gentle, natural fizz of the palm wine
  • Squeeze your fresh lime juice directly over the ice. The acidity cuts through the natural yeastiness of the palm wine, keeping the cocktail incredibly crisp.
  • Slowly pour in the chilled, fresh palm wine.
  • Always use fresh, sweet palm wine for this. If the wine has fermented too much and turned sour, it will overpower the cocktail.
  • Top up the glass with your club soda or sparkling water to add that perfect, celebratory fizz.
  • Give it a very gentle stir with a spoon just to combine the flavours without losing the carbonation.
  • Slap a sprig of fresh mint against your hand to release its aromatic oils, tuck it into the glass, and drop in a thin lime wheel.

Watch the Fermentation. Palm wine continues to ferment rapidly after it’s tapped.
Buy it fresh on the day you plan to make the cocktail, and keep it strictly refrigerated until the moment you pour.

Tip

Add a thin slice of lime and a sprig of fresh mint for flavour
