Tired of Rice? Try This Yummy Potato And Turkey Curry Recipe For Easter

Easter is right around the corner, and I know you have plans to cook your signature jollof rice and chicken, which is a great idea; but if you are like me who most times eats rice at work during lunch breaks because you have no choice, then enjoying a special easter meal with family and loved ones that were not made from rice is an even better idea.

Give your family a treat with this not-so-popular yet easy and delicious meal made from turkeys, sweet potatoes, and colourful veggies, and thank me later.

All you need are:

  • Sweet Potatoes
  • A Kilo of Turkey
  • 1 piece each of Green, red, and yellow bell peppers
  • 5 Scotch Bonnet (regular Rodo pepper)
  • 1 tbsp of Cornstarch
  • 1 cup of Vegetable oil of your choice
  • Fresh Garlic
  • 1 medium size Onion
  • Spring Onions
  • 1 large Carrot
  • 1 handful of Green peas
  • 1 ½ tsp of Curry powder
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tso Dried Basil leaves (If you have fresh ones, its even better)
  • 1 tsp White pepper
  • Chicken seasoning
  • Salt

PREP YOUR INGREDIENTS

  1. Properly wash your turkey pieces, pat dry with a kitchen towel, and spice it up with chicken seasoning, white pepper, basil leaves, thyme, curry, and salt. Mix well and then cover and allow it to marinate in the fridge for at least two hours (or overnight).
  2. Wash and remove the seeds from your bell peppers, cut them into medium cubes, and set aside.
  3. Clean your carrots and chop them up
  4. Slice your onions, green peas & spring onions.
  5. Chop or mince your garlic
  6. Peel and chop your sweet potatoes into small cubes.
  7. Clean your pots and utensils… And now you’re ready to smash this recipe by following the instructions below.

INSTRUCTIONS

  1. Heat up your saucepan (or regular pots), then pour in some of your vegetable oil. Lightly stir fry your marinated turkey till slightly browned, remove from the oil, and set aside.
  2. In the same oil, stir-fry your onion, garlic and pepper for two minutes.
  3. Add your potatoes, chopped carrots, and green peas, then give it a quick stir. Add some chicken seasoning and some salt.
  4. Now add in your fried turkey, stir, then add water to the pot; not too much, just enough to cook your potatoes.
  5. Cover and simmer for five minutes until your potatoes are almost ready.
  6. Mix your cornflour (or plain flour) with some water to make a slurry, then pour in the mixture into the pot to thicken your dish.
  7. Introduce some bright colours into your dish by adding your chopped green, red and yellow bell peppers, cover the pot then cook for three minutes.
  8. Garnish with some spring onions and turn off your heat.

Congratulations! You just won your loved ones’ hearts with this epic potato and turkey curry. If you don’t have turkey. You can substitute with chicken or beef, only the name of the dish will slightly change, but the result will be just as delicious as when you use turkeys.
