When it comes to big flavour with minimal effort, nothing beats One-Pot Cajun Chicken and Rice. It’s smoky, spicy, and best of all, leaves you with exactly one pan to scrub.
This all-in-one meal is perfect for busy weeknights when you want a gourmet dinner without the mountain of dishes.
Ingredients
1 lb boneless, skinless chicken thighs (cut into bite-sized pieces).
-1 onion, 1 green bell pepper, and 2 stalks of celery (diced).
-1.5 cups long-grain white rice (rinsed).
– 2.5 cups chicken broth.
– 2 tbsp Cajun spice blend (ensure it’s low-sodium or adjust salt accordingly).
-3 cloves garlic (minced) and 1/2 cup crushed tomatoes.
-Sliced green onions and a squeeze of fresh lime.
Instructions
-Toss the chicken in 1 tbsp of Cajun seasoning. In a large skillet or Dutch oven, heat oil over medium-high heat. Brown the chicken (about 3 minutes per side). Remove and set aside.
-In the same pot, add the onion, pepper, and celery. Cook until softened (5 mins). Add the garlic and remaining Cajun seasoning, stirring until fragrant.
-Stir in the dry rice, coating it in the flavorful oils for about 1 minute.
-Pour in the broth and crushed tomatoes. Return the chicken (and any juices) to the pot. Bring to a boil, then reduce heat to low.
-Cover tightly and simmer for 18–20 minutes, or until the liquid is absorbed and the rice is tender.
-Turn off the heat and let it sit, covered, for 5 minutes. Fluff with a fork and garnish with green onions

Strawberry lemonade is refreshingly bright, tart, and just sweet enough. This simple recipe uses a fresh strawberry syrup to ensure every sip is smooth and vibrant.
Ingredients
-1 lb fresh strawberries (hulled and sliced).
-1 cup fresh-squeezed lemon juice (about 5–6 large lemons).
-1 cup granulated sugar.
-5 cups cold water (divided)
-Lemon slices, fresh mint, or extra strawberries.
Instructions
-In a blender, combine the strawberries, sugar, and 1 cup of the water. Blend until completely smooth.
-If you prefer a clear lemonade without pulp or seeds, pour the blended mixture through a fine-mesh sieve into a large pitcher.
-Add the fresh lemon juice and the remaining 4 cups of cold water to the pitcher.
-Stir well until the sugar is fully dissolved. Taste and add more water if you prefer it less tart, or more sugar if you like it sweeter.
-Pour over plenty of ice and garnish with lemon rounds or mint leaves for that fancy cafe look.
-For a sparkling version, swap the last 4 cups of still water for chilled club soda or sparkling water just before serving.
