Kunu Aya is a nutritious milk obtained from the gifts of nature and specially ascribed to the Hausa’s in Northern Nigeria . KunuAya is made of rich tiger nuts and coconut milk. Kunu Aya is a variant in the types of kunu made by the Northerners in Nigeria. Kunu generally means a local beverage made from different cereal grains. Such grains include guinea, millet, rice and corn.

Kunu aya can be served as a drink or paired with cereals and great for vegetarians. 

Additionally the grains used to make the kunu dictates the names attached to it for instance kunu zaki and kunu aya which the recipe and method is just below.

 Ingredients

  • 1 coconut
  • 10 dates (Dabino)
  • 2 cups of fresh tiger nuts  also known locally as Aya or ofio
  • 1 moderate size ginger root(optional)
  • 2 cups warm water

Method

  1. Wash the tiger nuts and soak in water for 15 or a night before (20) hrs, this will make it easy to blend as it absorbs water and softens.
  2. Crack open the coconut and unshell. Chop or grate the coconut into tiny pieces so that it’s easy to blend. 
  3. Wash and clean the ginger, remember this is optional.
  4. Wash the dates and remove the seeds, the dates can also be soaked a day before so it’s soft and easy to handle.
  5. Once all is ready, put it all together and blend with a cup of warm water.
  6. When done blending, turn the blended mix in a strainer so the liquid can pour out.
  7. Add the remaining water to the shaft and blend again to get all the juices out.
  8. Strain the mix from the blender with a muslin cloth to get the remaining milk.
  9. Discard the shaft and store the milk in a refrigerator to get it chilled, serve and enjoy kunu aya at its best.
