Ingredients
2 large chicken breasts (halved lengthwise into thin cutlets)
½ cup all-purpose flour
Salt and pepper to taste
3 tablespoons olive oil
3 tablespoons unsalted butter
1 cup chicken stock
⅓ cup freshly squeezed lemon juice
2 tablespoons capers, drained
Fresh parsley (chopped, for garnish)
Lemon slices, to serve (optional)

Instructions
Season the chicken cutlets with salt and pepper. Dredge them lightly in flour, shaking off the excess.
Heat olive oil in a large pan over medium heat. Sear the chicken for about 3-4 minutes per side until golden brown. Remove and keep warm.
In the same pan, melt the butter. Stir in chicken stock, lemon juice, and capers. Let simmer for 3-4 minutes, scraping up the flavourful brown bits from the pan.
Return the chicken to the pan. Spoon the sauce over it and simmer for 5 minutes until the chicken is juicy and tender.
Garnish with parsley and serve over pasta, rice, or crusty bread. Add lemon slices for extra pizzazz.
