This pound cake is dense, delicate, with a rich buttery taste and a slight tinge of lime. This is an old recipe of my grandmother’s, and baking it was such a nostalgic experience, as the aroma of nutmeg and butter filled the kitchen as it baked in the oven
.
Ingredients
- 227g of butter
- 1 1/2 cups, sugar
- Lime zest
- 5 eggs
- 2 tablespoons, sour cream
- 1 teaspoon, vanilla essence
- 2 cups, all-purpose flour
- 1 tablespoon baking powder
- 2 limes
- Half a nutmeg
Preparation
- Add baking powder and grated nutmeg into flour. Sift and set aside.
- Preheat oven to 150° C.
- Grease and dust a standard loaf pan
- Grate lime zest into butter in mixing bowl. Beat at high speed.
- Oil in the zest mix well with butter.
- Add sugar, mix for 5 minutes. Add eggs to mixture, one at a time. Mix for 2 minutes.
- Add sour cream and vanilla.
- Detach bowl from mixer and fold in flour.
- Pour batter into greased and dusted standard loaf pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out dry, and cake is springy to the touch.
- Remove from oven, poke holes on the top of cake and pour fresh lime juice over top of cake.
- Allow to cool.
- Serve. Enjoy.
