
The Nigerian version of a beef kebab or skewer,is called stick meat. The only difference is that the beef pieces are much smaller in size and stacked on a toothpick instead of a larger wooden skewer. It is a popular small chop and snack in Nigeria and is really easy to make.This is a snack that you can hardly go wrong with.
Here is a simple recipe to follow:
Ingredients
- 1 pound beef
- Bell peppers (Red, green yellow, orange…Use the any combination and number of your choice)
- 1 onion bulb
- 3 seasoning cubes (maggi or knorr)
- 2 teaspoons dry pepper or 1 scotch bonnet pepper/atarodo
- 1 teaspoon curry
- a dash of thyme
- 1 teaspoon minced garlic and ginger
- Some water
- 3 tablespoons veg/canola oil (If you are FRYING the beef pieces)
- 4 tablespoons melted butter/olive oil (If you are BAKING the meat pieces)
- A pack of toothpicks

Directions
- Cut the meat into thin slices; then chop into cube pieces
- In a bowl, put the seasoning cubes, salt, dry or fresh pepper,minced garlic & ginger,thyme and curry; stir properly
- Add the cubed beef pieces to the spices in the bowl and mix properly.
- Set the meat aside to marinate for at least 30 minutes or more (the longer the meat and spices sit together, the tastier the beef will be)
- Once the meat is done marinating,boil for about 10-15 minutes. Use as little water as possible, so as to retain the flavor of the spices
- After boiling the meat,you can fry or grill the beef pieces
- If frying, heat the vegetable oil in a frying pan and fry the beef pieces till they turn dark brown, If grilling, coat the beef pieces with butter or olive oil;transfer into a foiled buttered baking pan and grill/broil in the oven for about 10-15mins or until the turn dark brown
- Chop the bell peppers and onions into your desired shapes
- Fry the fresh vegetables for 2 mintues
- Using a toothpick arrange the meat and vegetables
