Are you tired of eating the same kind of food every day? Do you wish to add some excitement to your meals? Then consider this recipe a great change to it. The spinach, boerenkool and tomato stew is a good option to replace the traditional rice and stew sauce. The colourful and flavourful sauce is packed with vitamins and nutrients from different fresh vegetables that will make eating rice more fun.
Ingredients
3 medium fresh tomatoes, chopped.
1 medium paprika, chopped.
1 medium onion, chopped.
1 habanero pepper, chopped.
3 tablespoon olive oil.
½ cup water or stock.
A handful of spinach.
3 handfuls of boerenkool (Kale).
2 teaspoon West African seasoning.
Mix salt to taste.
1 bouillon cube (optional).

Preparation
- Chop fresh tomatoes, onions, habanero pepper and paprika into cubes.
- Pour oil on a clean pot, heat up the oil and add chopped onions. Allow to cook until tender
- Add chopped tomatoes, paprika and pepper. Allow to cook for 3 minutes
- Add 2 teaspoon of seasoning mix, salt and bouillon (optional) and stir the mixture together
- Add spinach and cook for one minute and then add Boerenkool. Cook for another two minutes and bring down from heat.
- Serve with cooked rice, boiled potatoes or yam.
- You can alternate the three (3) whenever you like with this wonderful spinach, boerenkool and tomato sauce.
