Every year, National Ice Cream Sandwich Day is celebrated on August 2nd. It is a day dedicated to celebrating one of summer’s most beloved frozen treats. While you could certainly indulge in a store-bought version, why not take the opportunity and make this delicious homemade ice cream sandwich right in your kitchen?

Making ice cream sandwiches at home is surprisingly easy and allows you to tailor the flavours to your liking. All you need are a few simple ingredients and a bit of time. Here’s a quick and easy recipe to help you celebrate this national day:

Ingredients:

1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
A pint of your favorite ice cream, softened slightly

Instructions:

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. When it’s done, set it aside.

3. In a large bowl, beat the butter and sugar together until the texture is light and fluffy. This should take about two to three minutes. After that, beat in the egg and vanilla until it has smoothly combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Take caution to not overmix.

5. Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about two inches apart. Bake for 8-10 minutes, until the edges are set.

6. Allow the cookies to cool on the baking sheet for five minutes before transferring them to a wire rack to cool completely.

7. Once the cookies are cooled, place a scoop of ice cream on the flat side of one cookie and top with another cookie, flat side down, to create an ice cream sandwich.

8. Repeat with the remaining cookies and ice cream.

9. Place the ice cream sandwiches on a baking sheet and freeze for at least two hours before serving.
