Dice your pineapple into small chunks.
Blend the diced pineapple and ice together in a blender until you have a slushy consistency.
Pour the coconut milk into it to give it a creamy texture.
Add the cream of coconut.
Put the rum. For that classic Piña Colada kick, add light rum. You can skip this step if you prefer a non-alcoholic version.
Blend all the ingredients together until the mixture is smooth and creamy.
Pour your Piña Colada into a chilled glass. Garnish with a slice of fresh pineapple on the rim of the glass. You can also add a maraschino cherry on top for a pop of colour and extra sweetness.
Serve cold.

Additional tips

Be sure not to mix up “cream of coconut” with “coconut cream”. Cream of coconut is coconut cream processed to form a syrup-like consistency, while coconut cream contains coconut meat with a small amount of water.
You can leave out the rum and have a virgin Piña Colada.
Feel free to experiment by adding a splash of lime juice for a tangy twist or a dash of vanilla extract for added depth of flavour.
