The process
Make the batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat together the milk, egg, melted butter, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix!
Heat the pan: Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.
Pour the Batter: Pour about 1/4 cup of batter onto the hot skillet. Tilt the pan to spread the batter evenly.
Cook until golden: Cook for 2-3 minutes, or until bubbles appear on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes, or until golden brown.
Repeat: Repeat steps 3 and 4 until all the batter is used up.
Serve and enjoy
Serve your pancakes hot with your favourite toppings. I like to do honey, but you can choose whatever topping works for you. We love a classic stack with butter, syrup, and a sprinkle of powdered sugar. But feel free to get creative! Try adding fruit, whipped cream, or even a dollop of your favourite Nigerian spread.

Tips for Pancake perfection
Don’t overmix: Overmixing the batter can lead to tough pancakes.
Test the heat: Before pouring the batter, test the heat of the skillet by dropping a small amount of water onto it. If it sizzles and evaporates immediately, the skillet is hot enough.
Now, go forth and create pancake magic! With these simple steps and a little bit of Nigerian flair, you’ll be flipping up delicious stacks in no time. Happy cooking!
