Fried Mushroom Chicken With Peppercorn Salt
Ingredients
- Oyster Mushrooms
- All-purpose wheat Flour
- Corn Starch
- Sparkling Water
- Corn Oil
- Peppercorn Salt
- Scallion
- Coriander
- Oil
Instruction
1. Break the oyster mushrooms with hand into long pieces, and cut the scallion and coriander into small pieces
2. Mix wheat flour, corn starch, and sparkling water in a bowl, then add 1 tbsp corn oil, keep mixing until the batter is very smooth
3. Heat the oil for frying(medium-high heat), once the oil is hot enough(about 150-160C/302-320F), coat the oyster mushrooms evenly with the batter and add them to the frying pan one after one so they don’t stick together, separate them carefully with chopsticks
4. Fry until they are golden and crispy on the outside (here it took about 10 minutes), take them out on kitchen paper to soak up the extra oil, sprinkle peppercorn salt evenly on the mushrooms, add scallion and coriander.
