Vanilla Pudding

Gradually whisk in 2 cups milk until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 2 teaspoons vanilla extract.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.
Chocolate Pudding
Mix 1/2 cup sugar, 1/4 cup unsweetened cocoa powder, 3 tablespoons cornstarch, and 1/4 teaspoon salt in a medium saucepan.
Gradually whisk in 2 cups milk until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 2 ounces chopped chocolate or 1/4 cup chocolate chips.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.
Rice Pudding
In a medium saucepan, bring 1 cup water, 1/4 cup uncooked white rice, 1/4 teaspoon salt to a boil.
Reduce heat to low, cover and simmer for 18-20 minutes or until rice is tender.
Stir in 1 cup milk, 1/2 cup sugar, 1/2 teaspoon vanilla extract, and a pinch of cinnamon.
Cook for an additional 10-15 minutes or until the pudding is thickened.
Lemon Pudding
Mix 1/2 cup sugar, 3 tablespoons corn-starch, and 1/4 teaspoon salt in a medium saucepan.
Gradually whisk in 2 cups milk and 3 tablespoons lemon juice until smooth.
Cook over medium heat, whisking constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in 1 teaspoon lemon zest.
Pour pudding into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Let cool to room temperature, then refrigerate until chilled.
Bread Pudding
Preheat oven to 350 degrees F.
Butter a 9×13 inch baking dish.
In a large bowl, mix together 6 cups bread cubes, 3 cups milk, 1 cup sugar, 3 eggs, 1 teaspoon vanilla extract, 1/2 teaspoon salt, and 1/2 teaspoon nutmeg.
Pour mixture into the prepared dish.
Bake for 45-50 minutes in the preheated oven, or until a knife inserted in the center comes out clean.
