Ingredients
3 cups (360 grams) all-purpose flour
1 1/2 tablespoons ground ginger
1 tablespoon ground cinnamon
1 teaspoon ground white pepper
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cloves
1 cup (227 grams) unsalted butter
3/4 cup (150 grams) dark brown sugar
1/2 cup molasses
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon grated fresh ginger
1/2 teaspoon fresh orange zest
Instructions
Prepare the dry ingredients
In a large bowl, whisk together the flour, ground ginger, cinnamon, white pepper, salt, baking soda, nutmeg, cloves and set them aside.
Cream the butter and sugar
Next is to mix your room temperature butter with your dark brown sugar until smooth and creamy. You can scrape down the sides of the bowl to ensure proper mixture.
Add wet ingredients
Add the molasses, egg, vanilla extract, fresh grated ginger, and orange zest to the butter-sugar mixture. Mix until everything is properly infused together.
Combine all mixtures
Gradually, add the dry ingredients to the wet mixture. It is best if it’s mixed on low speed until everything is properly combined. Setting on high speed can lead to a splash out. Do not over mix so you don’t get a tough dough.
Allow the dough to cool
Transfer your dough onto a sheet of plastic wrap, shape it into a disk, and wrap it tightly. Refrigerate for at least 20 minutes to firm up the dough, making it easier to handle.
Roll out
Place the chilled dough between two sheets of lightly floured parchment paper. Roll it out to about 1/4 inch thickness. For easier handling, place the rolled-out dough on a baking sheet and freeze for 15 minutes.
Cut to your desired shape
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Use cookie cutters to cut the dough into desired shapes, such as gingerbread men or stars. Arrange the cutouts on the prepared baking sheets, spacing them about 1 inch apart.
Bake
Bake your bread in the preheated oven for 10 to 15 minutes, or until the edges just begin to brown. For softer bread, bake on the shorter end of the time range. For a more brown bread, bake longer.
Cool
Remove from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. After this, you can enjoy your ginger bread.
