Homemade Churros

Ingredients

For the churros:
●1 cup water
●2 tablespoons white sugar
●1/2 teaspoon salt
●2 tablespoons vegetable oil
●1 cup all-purpose flour
●2 quarts oil for frying

For the coating:
●1/2 cup white sugar
●1 teaspoon ground cinnamon

For the chocolate dipping sauce:
●1/2 cup heavy cream
●100g dark chocolate, chopped
●1 tablespoon sugar (optional)
●1/2 teaspoon vanilla extract

Instructions

1. In a medium saucepan, combine water, two tablespoons of sugar, salt, and two tablespoons of vegetable oil. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour until the mixture forms a ball.

2. Heat oil in a deep skillet or pot to 375°F (190°C). Ensure the oil is hot enough by dropping a small piece of dough into it; if it sizzles and rises to the surface, the oil is ready.

3. Transfer the dough to a pastry bag fitted with a large star tip. Squeeze strips of dough into the hot oil, cutting them to your desired length with scissors or a knife. Fry until golden brown, about 2-3 minutes per side.

4. Remove churros with a slotted spoon and drain on paper towels. In a shallow dish, combine 1/2 cup sugar with 1 teaspoon cinnamon. Roll the warm churros in the cinnamon-sugar mixture until fully coated.

5. In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then stir until smooth. Add sugar and vanilla extract if desired, adjusting sweetness to taste.

6. Serve the churros warm with the rich chocolate dipping sauce on the side. Enjoy them fresh for the best texture and flavour.
